Detailed Description
Named after the Spanish term for the sugar cane harvest, Zafra Master Reserve is a premium Panamanian rum produced using a small columm still and matured for at least 21 years in casks that formerly held bourbon. Blended by a former maestro ronero for Havana Club, Zafra is a pleasingly rich but interestingly dry rum with a perfectly silky mouthfeel and superb balance. Marvellous stuff.
Zafra Masters Reserve 21 Year Rum Tasting Notes
Nose: Mocha, raspberry and brandied cherry. Currant buns and lemon tart later on.
Palate: Soft caramel and milky coffee leading into brown sugar and Curaçao orange peels. Some spicy black liquorice notes.
Finish: Waxy peels, cardamom and brandied cherries again.
Distillery Information
Las Cabras Distillery was first erected in 1919 as a sugar mill. Since then ownership has passed between the government, international investors, and failed businessmen.
In the mid-nineties, “Don Pancho” and Carlos Esquivel discovered the neglected warehouse. Beneath the overgrown grass they uncovered a copper column still with a small medallion inscribed with ‘Cincinnati 1922’. “Don Pancho’s” skills and experience were soon put to good use, and Las Cabras was transformed into one of the great rum distilleries of the world.
