After a minimum of three distillations to ensure the highest level of purity the spirit is chill-filtered with activated charcoal to give a smooth, full-mouth feel. rounded character. With the purest BC Grain and the cleanest BC coastal mountain water, the finished spirit is supremely smooth, clean and lightly sweet.
Nose: Gentle aromas of vanilla, nougat and citrus.
Palate: Silky, dry, medium body with a long lasting creamy and delicate finish.

New Liberty Distillery was founded in 2004 by Robert Cassell (formerly with Philadelphia Distilling) in Philadelphia, Pennsylva. Their building once served as a stable, and much of its architecture, including the horse stalls, have been preserved. The building now provides a home to our custom-made still, as well as the rick house where they barrel age their whiskey. In addition to the working distillery, they also feature a beautiful bar and tasting room where you can sample their whiskey and enjoy craft cocktails created by their in-house mixologist Sam. Their Heritage Collection and New Liberty whiskeys, spirits-related gifts, and other locally sourced products can be purchased in their retail space.
