A collaboration between Green Room and London’s Michelin-Starred restaurant Trinity, it’s another seasonal release from the distillery – this one celebrating autumn. As such, it packs in fig leaves (known for creamy, grassy notes), blackcurrant leaves, and rosehips alongside tart crab apples. Serve it with tonic and a slice of fresh apple to bring out those seasonal flavours.
Distillery Information
Green Room’ Distillery was set up by Duncan McLean and Seb Frost, two friends who were working in the theatre industry that was so heavily impacted by the lockdown in 2020. Having acquired a copper pot still from a friend in France 3 years earlier, Duncan’s design studio was converted into a distillery before launching Green Room Gin in 2021. Green Room Distillery partners with the charity BACKUP, which supports technical professionals in the entertainment industry, with £1 being donated from each bottle sale.
