In the first year of the Taisho era, he started brewing under his title. The town of Uchino, where our brewery is located, is located to the west of Niigata City and is also known as the town of Niigata University. Since ancient times, the area has been blessed with high-quality water, rich in underground water from the Shinano River. You can see the overpass of the Nishikawa River, a tributary of the Shinano River, and the Shinkawa River, which was dug by hand during the Edo period, and you can feel the history of the building of a rich grain region. The brewery is an old-fashioned earthen warehouse, and the temperature difference between the four seasons is small, making it an ideal environment for sake brewing. The 25 brewing tanks are equipped with automatic cooling devices, and we thoroughly control the temperature of not only the fermentation of the moromi but also the stored sake.
