Distillery Information
Shimizu-No-Mai was the first brewery in Akita with its own rice polishing facilities, where they polish their rice a minimum of 5% more than law requires, producing Sake of the highest quality. Small family sake breweries dating back to 1656, came together in 1944 to reestablish themselves as Akita Shurui Seizoh Company. Located at the heart of Akita prefecture, where three rivers gather, you can find the purest water since the time of the Samurai, lending the highest of quality to these sakes. The brewery strictly follows their beliefs that they are one with the land and will produce sakes of high quality as they reflect the toji spirit. The brewery is located in Akita, Japan – one of the country’s top regions known for producing exceptional artisan sake. The traditionally cold weather lends an extended fermentation, preserving delicate aromatics, while being the first brewery to include rice-polishing facilities allowing them to control the quality from start to finish. Their consistent push for excellence is what earned them 17 consecutive gold medals at the “National New Sake Awards,” the only national blind tasting held in Japan.
