A spirit fermented and distilled from grapes, Pisco was initially developed by Spanish settlers in Peru around the sixteenth century as a cheaper alternative to their imported national spirit, ‘Orujo’ (a transparent spirit obtained from the distillation of the pomace of the grape, usually bottled at roughly 50% alc/vol).

Detailed Description

This Acholado (or blend) pisco is comprised of four grapes: italia, muscatel, quebranta, and negra criolla. All of the grapes, with the exception of the negra criolla, are aromatic grapes, which is exactly what they sound like: grapes which provide a fragrant aroma, particularly with floral and fruity notes.

Santiago Queirolo Acholado Pisco Tasting Notes

Nose: This is a pisco you really have to spend some time with in order for the aromas and flavors to reveal themselves. Once you do, the fruit aromas (peach, apricot, green grapes) begin to come out.

Palate: The pisco is soft on your palate and clean with a little herb flavor (think refreshing green herbs rather than dried, twiggy herbs).

Finish: Lingering.
