Detailed Description
Here we have an absinthe from those Psychopomp folks over in Bristol (a psychopomp is a being who escorts the dead to the afterlife). This absinthe contains hyssop, dill seed, anise and fennel seed alongside the obvious wormwood, and after distillation it’s aged in new French oak. The spirit is bottled at a punchy 62.3% ABV, in a no-nonsense, minimalist bottle.

Nose: Assertive toasted anise on the nose.
Palate: All of those hallmark anise flavours, a slight floral note with a bitter undertone and herby fennel.
Finish: Finishes with a rush of herbs and chamomile.
Distillery Information
Psychopomp is a small, independent, carbon neutral Micro-Distillery based in an old grocery shop on St Michaels hill, Bristol. They use handmade 30L copper pot stills to produce gin in small batches, using a single shot method. They produce their signature gin recipe ‘WODEN’ alongside limited edition seasonal recipes and bespoke batches for local independent restaurants/producers/businesses. They also produce a variety of other spirits as unique as each of their gins; the first British Aqvavit, a Parisian style Absinthe and single origin coffee digestif!
