This Junmai Ginjo sake is produced by Asahi Shuzo, a small brewery situated in Shimane Prefecture. Made with 100% Yamadanishiki rice and a 55% polishing ratio, it is a matured style of sake that is left at room temperature in the brewery to slowly develop complex flavours.
