Absinthe is a distilled spirit derived from the herbs Artemisia absinthium and grande wormwood. This spirit is traditionally made in a process called “filtration” which means that the spirit is left to oxidize in cold water, with sugar and the green leaves of the plant (which is where the bitter taste comes from) added. The spirit has a high alcohol content and is usually green or amber in color. Absinthe is often referred to as “The Green Fairy” because of its distinct color. It is traditionally served in a stemmed glass that has been coated inside with sugar and then swirled to release the absinthe’s alcohol vapor. The drinker then drinks it through a slotted spoon, which causes the sugar water to mix with the absinthe and release an oily layer on top of the drinker’s glass. The “Oil of Anise” or anise is also often added to give the drinker a sweet and licorice flavor.
