This complex wine-spirit-hybrid made from Naked and Pearled Barley, Belgian Saison yeast (sourced from the lab next door to Empirical Spirits) and koji. It also contains a kilo of habaneros in every bottle. The refined sweetness the chillis posses was then balanced by blending a distilled habanero vinegar. Spice isn’t going to be a problem for anyone worried about that aspect, as the capsicum was too heavy to distil. Instead, the habanero flavour shines without the heat in this exciting and experimental Empirical Spirits bottling that’s something of a ‘spirited’ response to the President of the United States’ opinions on border policy…

Nose: There’s a fruity sweetness on the nose with vegetal notes and mineral earthiness.

Palate: Despite being crafted with chili peppers, there’s no chili heat here. Instead, there is a warm, vegetal, and fruity profile with an earthiness and sweetness to it with juicy red fruit, melon, and green pepper notes.

Finish: Smooth, warm and vegetal finish with a distinct mineral-rich earthiness and lots of complex sweetness.

Considering that Empirical Spirits was founded by two former employees of noma, a two-Michelin-star restaurant named best in the world multiple times, it should come as no surprise that a focus on flavour is intrinsic to everything created by the Danish distillers. Lars Williams and Mark Emil Hermansen started the company in 2017, and it has since become one of the most exciting names in the drinks world. Using low-temperature distilling, long fermentation times, a unique base spirit made from koji and a seemingly never-ending selection of ingredients that many distillers would not have thought about utilising, Empirical Spirits has created a host of fascinating drinks that could seem imposing if they weren’t so bloomin’ easy to enjoy. Flavour is funny like that.
