This was a project that has been a labour of love for the team over at Sager and Wilde, finding the real examples of terroir and quality producers for agave in Mexico, and the results are worth the wait. The Espadilla agave (also known as Espadin) is from San Juan Bautista Jayacatlan. The unusual method of production here gives the spirit a delicious brown-sugar sweetness and a umami character.

El Destilado present another unique agave spirit, made from the Espadilla agave and crafted by Luis Sandoval Dolores in Oaxaca. This particular expression was cooking for a hefty 144 hours and was fermented in clay pots, giving it a distinct flavour profile. A meagre 110 bottles of this were produced.
Nose: Full-bodied aroma.
Palate: A splendid taste with a warm feel to it. Not to smoky but silky smooth.
Finish: Rich and smooth.
