Del Maguey have done it again with this funky mezcal made using Jabalí, a rarer agave that’s not commonly used as it’s significantly more difficult to distil – the little rascal. Jabalí actually translates to “Wild Boar”, because the shape of the agave looks like the teeth of a boar.

Nose: Bright and vibrant acidity of pink grapefruit,
Palate: Delicate and sweet violet balanced by savoury herbal notes of tarragon
Finish: Black pepper and a woody finish.
Distillery Information
Founded by Ron Cooper in 1995, Del Maguey Mezcal benefits from deep cultural relationships with Zapotec Mexican Indian producers in remote villages of Oaxaca, Mexico, and their ancient organic processes established over 500 years ago. The mezcal is produced with only two ingredients: the heart of the agave, and 10% pure water added to the fermentation process. Each Single Village Mezcal is made by individual family producers in old-style villages, with each product credited after the village where the liquid was made. Each label is drawn by iconic L.A. artist Ken Price, who coincidentally happened to live next door to Cooper in California in the ‘60s, and the pair became lifelong friends.
