Detailed Description
This 100% agave espadin mezcal is made in the traditional Oaxacan style in Santiago Matatlán. It is crafted and distilled with a deep respect for the ancestral process and soul of the mezcal. The heart of the mezcal, the espadin agave, is harvested from the wild and cooked for five days in an underground pit oven. It is then fermented for five days using wild yeasts and distilled twice in a traditional clay still. The result is a smoky, complex and smooth mezcal with notes of cooked agave, earth, and spice.
