Catskill Distilling’s Peace Vodka is distilled entirely from locally-grown whole wheat, which Sachs purchases from a nearby mill. After mashing and fermenting the wheat for approximately five days, Sachs distills the wash through his custom-made, twin 650-liter copper-pot stills imported from Germany. “Some people have said saxophone; some people have said flute; some people have said Willy Wonka,” says Sachs of the still’s appearance. “But it is an incredible instrument.” Once the wheat has been distilled, Sachs gives the sour mash to a local farmer, who uses it as feed for his cattle. Then, he brings the vodka to proof with pure snowmelt water sourced from the Catskill Mountains, before filling and labeling each bottle by hand. Catskills Peace Vodka earned four stars from F. Paul Pacult’s Spirit Journal, which “highly recommended”the vodka, and earned the Gold Medal at the New York Food and Wine Classic in 2012.

Nose: Hint of chocolate, cola, vanilla ice cream, pastry dough, creamy, rye, peppery.
Palate: Vanilla, butterscotch, cream, caramel, herbal, grassy, almond oil, nutty, pepper, nicely layered, very smooth, enjoyable.
Finish: Buttery, vanilla, clean, fresh, pleasant, perfect.
