From Italy’s Distillati Capovilla comes this Grappa di Bassano, produced using the pomace of Cabernet Sauvignon, Chardonnay, Merlot and Vespaiolo grapes. The pomace is distilled slowly at a low temperature thanks to the use of a bain-marie method. It’s rather rare to see a grappa named ‘di Bassano’, at it requires the liquid to be made only with pomace local to the Veneto town of Bassano del Grappa!
