Capovilla was started in the 1970s by Vittorio Capovilla—who has since become a renowned producer of grappa and eau de vie—almost by accident. He had spent his formative years working as a Formula 1 mechanic in Central Europe, which helps to explain his keen interest in the machinery used by distillers.
