Made under the supervision of Europe’s most famous absinthe distillery, each batch of Butterfly Classic Absinthe is the result of a staggering 60 production steps starting with plant selection all the way to distillation and bottling. The absinthe starts with locally-grown grande wormwood, petite wormwood, peppermint, hyssop, Melissa, and the finest imported anise, star anise, fennel, and citrus. These are then macerated in a neutral spirit to impart it with their unique flavors. The resulting blend is then distilled before being brought to proof with pure water and bottled and labeled with the same classic butterfly design used by the original Boston iteration.
Butterfly Classic Absinthe Tasting Notes
Nose: Pale yellow in color, each sip of this absinthe yields a mild citrus aroma accented by hints of rootbeer and mint.
Palate: This is immediately followed by a bold, bright, and creamy palate of star anise, wormwood bitterness, fennel, licorice, more mint, ginger spice, lemongrass, and wet earth.
Finish: A smooth and lingering finish of anise.
Distillery Information
Originally made by the Dempsey Distillery in Boston around 1902, the Butterfly brand of absinthe became of one of the casualties during the dark days of Prohibition become all but forgotten even after the law was repealed. It was not until absinthe historian Brian Fernald got hold of one of their original bottles that the brand was resurrected. Now produced in Switzerland, the brand has finally returned to its home allowing contemporary drinkers to enjoy the classic spirit as their ancestors did over a century ago.
