An exceptional expression here from Bollinger, the R.D. 2007 (the “R.D.” stands for “recently disgorged”) was made using 70% Pinot Noir and 30% Chardonnay grapes, and a particularly low dosage of three grams per litre. After 2007’s hot spring and a fairly wet summer, the Champagne was allowed a very long maturation. As the name suggests, it was disgorged and then released fairly soon after, and even features the disgorgement date on the label, which has been designed as a homage to the first R.D. release – the 1952 vintage, unveiled in 1967.

Nose: Nose is complex yet not overwhelming.
Palate: Crisp plum and pear, caraway, warming ginger, toasted bread, milk chocolate, hazelnut, Granny Smith apples.
Finish: Perfect, long lasting finish.
