Made from the ground up, each bottle of BALAM Sotol Desierto is distilled to perfection. The first step in distillation is to wash the sotol in water, then soak it in a solution of water and salt. After the sotol has soaked for three days, it is removed from the solution and dried in the sun. The sun dehydrates the sotol, and this creates a desired consistency. It is then taken to a still, where it is distilled three times to remove impurities. The result is a smooth, clear, delicious liquor that’s also low in alcohol content.
