Balam Sierra Sotol : Here we have an unaged Sotol from Balam, the same folks behind various delicious mezcals and raicilla. The Sierra expression is produced from Delylirion, which is not part of the agave family, but rather belongs to the Asparagales family. The plant is roasted in a wood-fired ground oven and then distilled, before the spirit is bottled at 42% ABV.
Nose: Aroma is very pleasant.
Palate: A splendid taste with a warm feel to it. Not to smoky but silky smooth.
Finish: The finish is surprisingly long and warming.
