Avu√° Tapinhoa Cacha√ßa is aged in tapinhoa wood, an extremely rare hardwood found in parts of South America. The spirit is aged in a barrel used decades ago by our distiller’s father. After a lengthy recommissioning process, and up to 2 years of aging, we are proud to offer our second unique Brazilian wood offering.
Avua Cachaca Tapinhoa Tasting Notes
Nose: The nose has the light petrol character that’s typical of cachaca, but it’s filtered through fresh notes of lemon, mint, and some salty brine.
Palate: On the tongue, similar notes dominate, with the sharp citrus and herbs quickly segueing to gentle vanilla, coconut, and some curious impression of wood — though not the typical oak — notes.
Finish: The finish is lightly vegetal with some notes of green beans and steamed broccoli.
Distillery Information
Avu√° Cacha√ßa is a single sourced and pot distilled spirit, made in a family distillery four hours north of Rio de Janeiro. Perfected over 100 years by the distiller’s family, great care is taken in the production process. Estate grown cane is hand cut and, within four hours, pressed by a water-wheel powered mill, followed by wild yeast fermentation for twenty-four hours. This culminates with a single distillation in an alembic pot still. The final products are then rested or aged on site and bottled at their peak. Our mission is to challenge the perception that cacha√ßa can solely be used in a caipirinha, expressing the tradition of cacha√ßa in Brazil that extends back over five hundred years.
