This is made way up in the north of Italy, but its heart really lies down on the Mediterranean coast with the Spanish vermouths. Made specially for the legendary Archivio bar in Verona, Volume Primo finds the perfect balance: neither too sweet nor pushing the limits of bitterness. While it makes a killer negroni, I like to have it with just soda water, dropping in an olive or orange slice for garnish. The base wine has Moscato d’Asti for fruit and floral and Sicilian Grillo for brightness and acid. It‚Äôs made at Antica Distilleria Quaglia in Piemonte and the botanicals come from the distillery’s own fields in the hills of Asti. Thyme, sage, knapwood, chamomile, licorice root, and vanilla come together with the classic wormwood and gentian for an intensely flavored style.
