Agua del Sol Ensamble Pichumetl-Papalometl Agave Spirit, which is hand-crafted in a small distillery in the mountains of Oaxaca, Mexico, is made from 100% organic agave pichu (Agave americana) and agave papalometl (Agave americana var. oaxacensis). These two agaves are roasted in a traditional stone horno and fermented with wild yeasts, then distilled in copper pot stills. The distillate is aged in French oak barrels for a minimum of six months.
Nose: Aroma is very pleasant.
Palate: The palate is an explosion of flavors and the finish is nice.
Finish: The finish is surprisingly long and warming.
