Distillery Information
located in the far south of Japan, on the island of Amami Oshima, the Yamada distillery was founded in 1957. Representing respectively the 2nd and 3rd generation of master distillers, Takashi and Takahiro Yamada create a shochu from a rice grown in Thailand, fermented a first time, to which they add, during the second fermentation, cane sugar “muscovade” (a kind of brown sugar) produced locally. A blend of several vintages from 2016 to 2020, this version has aged in enameled stainless steel vats. With great freshness of expression, its aromatic and taste palette reveals notes of pear, peony, raspberry and coriander, impressively realistic.
