Distillery Information
The oldest distillery in Kumamoto prefecture (1682), Hayashi makes this shochu from a variety of rice grown in the Hitoyoshi region, on the island of Kyūshū. Distilled in a direct-heated pot still, it was matured for 26 years in a terracotta jar dating from the Edo period. Both extremely mature and excitingly youthful, this Shoshu covers its aromatic and taste palette with a finely earthy veil, which you just have to pierce to discover fruity regions of incredible diversity.
