Named after Philip and Simon Thompson, the brothers behind the Dornoch Distillery, this gin features a selection of botanicals chosen with help from the feedback they received from their Experimental Batches series. This includes juniper berries, angelica root, cardamom seed, aniseed, orange peel, lemon peel, coriander seed, meadowsweet, elderflower, black peppercorn and freeze-dried raspberry. Not only that, but 10% of the base spirit is produced at the tiny distillery in Sutherland from Organic Plumage Archer Barley. Wonderful for using in cocktails and mixed drinks – they serve it with fresh lemon peel and a pinch of cracked black pepper at the Dornoch Castle Whisky Bar (which is well worth visiting if you’re a fan of antique whiskies).

Nose: Aroma is very pleasant.
Palate: This is extremely rich and very balanced in flavour.
Finish: The finish is surprisingly long and warming.
