5 Sentidos Bicuixe-Madrecuixe is the second special “ensamble” release from 5 Sentidos (EN-02). The first was the Jabali-Tobala from producer Alberto Martinez. This special bottling is a blend of two batches distilled in April 2013 and February 2014. The 2013 batch was the result of a 10-day bake of 60 mature agave Madrecuixe and 90 mature maguey Bicuixe piñas. The 2014 batch was a 5-day bake of 117 mature Bicuixe piñas. Both batches of cooked agaves were mashed by a bull-drawn tahona and fermented in pine and cypress tanks with well water before being double-distilled in copper stills by maestro mezcalero Atenogenes García.
5 Sentidos Bicuixe-Madrecuixe Mezcal Tasting Notes
Nose: Aromas of fresh green grass and cucumbers.
Palate: Tastes of Air Heads, yellow Skittles, and vanilla ice cream.
Finish: Finish is smooth and long.
