They do things a little differently down under. When it comes to Australian whisky, regulations state the minimum maturation time is two years. This makes a lot of sense when you think of the climate, but it also means it’s outside of the three-year minimum maturation time needed in order to be labelled as ‘whisky’ in Europe. So, what we have here is a single malt ‘spirit’ that joins That Boutique-y Malt Company’s Return to Oz collection. Distilled at Riverbourne, near Canberra, this peated spirit matured for two years in a cask made from American and French oak staves, gleaned from wine casks that underwent a process similar to STR. This single batch expression has bags of character, one to sip on while pondering those pesky regulations.

Nose: There’s an immediate iodine hit, slightly earthy, and medicinal too, but softens to reveal heather honey, and hints of tangerine.
Palate: Big, and chewy! With waves of sweet smoke, candied citrus, and creamy vanilla toffees, followed by some earthy peat with a pinch of salt.
Finish: Damp bonfires and warm spice.
Distillery Information
Founded in 2015, Riverbourne Distillery is a boutique distillery based in Jingera, New South Wales, (just south of Captains Flat). Head Distiller, Martin Pye, runs a two person show, mashing, fermenting, distilling and ageing his range of boutique whiskies and rums with the utmost attention to detail, while his wife Eileen does the bottling, labelling, paperwork and distribution. The natural spring waters, climate and mountainous environment produce spirits with a unique flavour profile distinctive to the region. The distillery currently has over 8000 Litres of rum and whisky ageing in French and American oak casks (a minimum of 3 years) and have different representations of whisky available now with a Rye whisky just before Christmas.
