A historic vermouth brand, Dolin has been made to the same recipe in the Alpine hills around Chambéry since 1821, and was awarded the only Appellation d’Origine for vermouth in 1932. The style is on the lighter and drier side, being sugared to around 130g/l.
Dolin Blanc de Chambery Vermouth Tasting Notes
Nose: Spicy bark nose with menthol, sea salt, faint pine and old lady’s perfume.
Palate: Delicate, slightly sweet palate balanced by white wine acidity with white fruit (grape, pear, ripe pineapple), pine, citrus fruit and floral (elderflower) flavours.
Finish: Well balanced bitter-sweet-acidic finish with lasting elderflower and citrus flavours.
Distillery Information
Dolin Vermouths are produced in the Alpine town of Chambery and makes its wines according to a controlled method that was set down in 1932. This means production must occur in Chambéry itself, real plants rather than pre-prepared infusions must be used during maceration, and sugar rather than other sweetening products must be used.
