The first locally-produced legal absinthe in the United States, the St. George Absinthe is a distinctly artisanal take on the iconic Swiss spirit. Made from their own proprietary botanical recipe, each batch of this absinthe begins with the botanicals being macerated in brandy before being re-distilled. After this, the whole herbs are then steeped into the spirit, further enhancing its flavor and giving it its iconic green hue before finally being cut with pure water and finally bottled.
St. George Absinthe Verte Tasting Notes
Nose: Each sip of this dark green absinthe greets you with an intense aroma of anise, rosemary, and complex herbs.
Palate: On the palate by powerful notes of sweet lemon, wormwood, basil, licorice, pepper, and freshly-cut grass.
Finish: A long-lasting finish of lemon balm, herbs, and fading wormwood bitterness.
Distillery Information
Based in Alameda, California, St. George Spirits was established in 1982 by Jorg Rupf, one of the pioneers in what would eventually be known as the craft distilling movement. Initially producing fruit brandies, the brand experienced its first big break with the release of their single malt whiskey offering since then has slowly expanded their portfolio to include expressions in various spirit categories including gin, vodka, rum, and even absinthe – all of which are carefully crafted from the finest ingredients to deliver a truly one-of-a-kind drinking experience.
